Instructions

  1. Prepare Your Ingredients: Chop all vegetables into even pieces and pat the chicken thighs dry to ensure a good sear.
  2. Brown the Chicken: Heat oil in a large pot over medium-high heat. Add the chicken pieces and cook until golden brown on all sides. Remove chicken and set aside.
  3. Sauté the Vegetables: In the same pot, add onions, garlic, celery, and carrots. Cook until softened and fragrant, about 5-7 minutes.
  4. Add Liquid and Seasonings: Return the browned chicken to the pot. Pour in the chicken broth, add thyme, bay leaves, salt, and pepper. Bring to a gentle boil, then lower heat to simmer.
  5. Add Potatoes and Simmer: Add diced potatoes and optional tomatoes or tomato paste. Simmer uncovered for 30-40 minutes until chicken is tender and vegetables are cooked through.
