Instructions

  2. Prepare the Jalapenos: While the bacon cooks, wash and slice the jalapenos. Remove seeds if you prefer less heat. Chop them finely to ensure the spicy flavor is evenly distributed throughout the filling.
  3. Mix the Filling: In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, and any optional seasonings like paprika or onion powder. Fold in the chopped bacon and jalapenos, mixing thoroughly until well blended and creamy.
  4. Assemble the Eggrolls: Lay one eggroll wrapper on a clean, flat surface with a corner facing you. Spoon about 2 tablespoons of the filling near the corner closest to you. Fold the corner over the filling, then fold in the sides and roll firmly but gently to seal. Use a little water on the top corner to secure the eggroll shut.
  5. Cook the Eggrolls: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the eggrolls a few at a time until golden brown and crispy, about 3-4 minutes per batch. Remove with a slotted spoon and drain on paper towels to keep them crunchy.
