Instructions
- Prepare the Cookie Crust: Preheat your oven to 350°F (175°C). In a bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy. Press about two-thirds of the dough evenly into a greased 9×13 inch baking pan to form a solid base.
- Make the Blueberry Filling: In a separate bowl, gently toss the fresh blueberries with sugar, cornstarch, lemon juice, vanilla extract, and cinnamon. Coat the berries evenly but carefully to avoid bursting them before baking.
- Assemble the Bars: Pour the blueberry filling over the pressed cookie crust and spread it out evenly. Crumble the remaining third of the cookie dough on top of the blueberries, covering most of the filling but leaving some berries peeking through.
- Bake Until Golden and Bubbling: Bake for 35-40 minutes or until the cookie crumbles are golden brown and the filling is bubbling. Allow to cool completely in the pan before slicing into bars to help the filling set.
