Description

Buffalo Chicken Alfredo Pasta is a creamy, spicy, and comforting dish that combines rich Alfredo sauce with zesty buffalo chicken, tossed with perfectly cooked pasta. Ready in under 30 minutes, this quick and easy recipe delivers bold flavor and satisfying comfort food, perfect for busy weeknights or any time you crave a hearty, flavorful meal.

Ingredients

Scale

Protein

  • 1 lb boneless chicken breasts or thighs, diced

Pasta

  • 8 oz fettuccine or penne pasta

Sauce

  • 1/2 cup buffalo sauce
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 2 tablespoons butter, divided
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Garnish

  • 2 tablespoons green onions or parsley, finely chopped

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, then add your pasta of choice. Cook until al dente according to the package instructions, usually around 8 to 10 minutes. Drain and set aside, reserving a cup of pasta water to adjust the sauce later if needed.
  2. Cook the Chicken: In a large skillet over medium heat, melt 1 tablespoon of butter. Add diced chicken pieces seasoned lightly with salt and pepper, cooking until golden brown and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. Make the Alfredo Sauce: In the same skillet, melt the remaining 1 tablespoon of butter and sauté minced garlic until fragrant, about 30 seconds. Pour in heavy cream and bring to a gentle simmer, stirring frequently. Slowly whisk in grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  4. Add Buffalo Flavor and Combine: Toss the cooked chicken in buffalo sauce until well coated, then add it back to the skillet with the Alfredo sauce. Mix in the cooked pasta, gently tossing to coat everything evenly. If the sauce feels too thick, stir in reserved pasta water a little at a time to reach your desired consistency.
  5. Garnish and Serve: Top with freshly chopped green onions or parsley for a fresh burst of color and flavor. Serve immediately while warm and creamy.

Notes

  • Use freshly grated Parmesan cheese for a richer, smoother sauce.
  • Avoid overcooking chicken to keep it juicy and tender.
  • Reserve pasta water to loosen and perfectly bind the sauce.
  • Adjust buffalo sauce amount gradually to control spice level.
  • Keep sauce warm on low heat to maintain creamy texture.
