Ingredients

Scale

Main Ingredients

  • 2 cups cooked day-old jasmine or basmati rice
  • 1 large chicken breast (about 68 oz), cooked and shredded
  • 1 cup mixed vegetables (bell peppers diced, carrots diced, peas, and green onions sliced)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cups fresh lettuce or mixed greens
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 eggs (optional)
  • Chili flakes or fresh chili to taste (optional)

Optional Garnishes

  • Chopped green onions
  • Toasted sesame seeds
  • Fresh cilantro, basil, or mint leaves
  • Chopped peanuts or cashews

Instructions

  1. Prepare the Chicken: Cook the chicken breast by poaching, grilling, or pan-searing until fully cooked and juicy. Allow it to cool, then shred or chop into bite-sized pieces and set aside.
  2. Cook the Rice and Vegetables: Use day-old chilled rice for best texture. Heat sesame oil in a large skillet or wok over medium-high heat. Sauté minced garlic and grated ginger until fragrant. Add diced bell peppers, carrots, peas, and cook until tender but still crisp.
  3. Add Eggs (Optional): Push vegetables to the side, scramble eggs in the pan until cooked, then mix with vegetables.
  4. Combine Ingredients: Add the cooked chicken and rice to the skillet, stirring well to combine. Pour in soy sauce and toss to coat all ingredients evenly.
  5. Assemble the Salad: In a large bowl or plate, lay a bed of fresh lettuce or mixed greens. Spoon the warm chicken fried rice mixture on top or toss lightly to mix with greens. Garnish with chopped green onions, toasted sesame seeds, chili flakes, or fresh herbs as desired.

Notes

  • Use day-old rice to prevent sogginess and achieve perfect fried rice texture.
  • Cook on high heat and stir-fry quickly to keep vegetables crisp and colors vibrant.
  • Prepare and chop all ingredients ahead to reduce cooking time.
  • Taste and adjust soy sauce to avoid oversalting.
  • Let the salad rest for a few minutes before serving to allow flavors to meld beautifully.
