Indulge in these elegant Chocolate Raspberry Cheesecake Domes featuring delicate chocolate shells filled with a creamy, raspberry-infused cheesecake center. Perfect for special occasions or anytime you crave a decadent and visually stunning dessert that balances rich chocolate, tangy raspberries, and smooth cheesecake.

Ingredients

Scale

Chocolate Shells

  • 200g good quality semisweet or dark chocolate

Cheesecake Filling

  • 300g cream cheese, room temperature
  • 100g granulated sugar
  • 1 tsp vanilla extract
  • 100ml sour cream or heavy cream
  • 100g fresh raspberries
  • 1 tsp gelatin powder or agar-agar (optional, dissolved as per package instructions)

Base

  • 50g unsalted butter, melted
  • 100g crushed biscuits (gluten-free if needed)

Garnishes (optional)

  • Extra fresh raspberries
  • Powdered sugar
  • Chocolate or raspberry coulis

Instructions

  1. Prepare the Chocolate Domes: Melt the chocolate gently using a double boiler or microwave, stirring frequently until smooth. Using silicone dome molds, brush melted chocolate evenly inside each mold to form sturdy shells. Chill in the refrigerator until fully set. Apply a second coat if needed for durability and chill again.
  2. Make the Cheesecake Filling: Beat the cream cheese with sugar and vanilla extract until smooth and fluffy. Gently fold in sour cream or heavy cream. If using gelatin or agar-agar, dissolve it properly and mix into the filling to help it set firm yet creamy. Carefully fold in fresh raspberries to retain their shape.
  3. Assemble the Domes: Once the chocolate shells are set, spoon or pipe the cheesecake filling into each dome, leaving a little space at the top. Smooth the surface of the filling for an even finish.
  4. Seal the Domes: Pour a thin layer of melted chocolate over the filling to close each dome completely. Return the molds to the refrigerator for several hours or overnight to allow the filling to firm up and the domes to set perfectly.
  5. Unmold and Serve: Gently remove the domes from their molds by pushing from the bottom. Place on serving plates and garnish as desired with fresh raspberries, powdered sugar, or a drizzle of chocolate or raspberry coulis.

Notes

  • Temper the chocolate before molding for a glossy finish and crisp texture.
  • Use room temperature cream cheese to avoid lumps and ensure silky filling.
  • Allow sufficient chilling time for shells and filling to set fully for easy unmolding.
  • Add fresh raspberries last in the filling to keep their shape and avoid bleeding.
  • Seal the dome tops carefully with chocolate to prevent cracks or leaks.
