Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.
  2. Sauté the Shrimp: In a large skillet, heat butter and olive oil over medium heat. Add peeled and deveined shrimp, season with salt and pepper, and cook for 2-3 minutes per side until pink and opaque. Remove shrimp from skillet and set aside.
  3. Create the Creamy Sauce: In the same skillet, add a little more butter and sauté minced garlic until fragrant, about 1 minute. Pour in the heavy cream and gently simmer for 3-4 minutes to thicken the sauce.
  4. Incorporate Spinach and Cheese: Add fresh spinach leaves to the creamy sauce, stirring until wilted and well combined. Then, sprinkle in grated Parmesan cheese, stirring until melted and smooth.
  5. Combine Pasta and Shrimp: Return the cooked shrimp to the skillet with the sauce and spinach. Add the drained fettuccine, tossing everything together until the pasta is evenly coated. If the sauce is too thick, add reserved pasta water a little at a time to loosen it.
  6. Finish with a Touch of Brightness: Remove from heat and squeeze fresh lemon juice over the pasta to brighten the flavors. Give a final toss and season with salt and pepper to taste.
