Loaded with tender artichokes, fresh spinach, and a blend of creamy cheeses, this slow-cooker dip melds into a velvety dish that stays warm and inviting for hours. Easily customizable and always a crowd-pleaser, it pairs beautifully with chips, veggies, or bread for dipping.

Ingredients

Scale

Vegetables

  • 1 (10 oz) package frozen chopped spinach, thawed and drained
  • 1 (14 oz) can artichoke hearts, chopped and drained
  • 2 cloves garlic, minced (fresh)

Dairy & Condiments

  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare Ingredients: Thaw and thoroughly drain the frozen chopped spinach to eliminate excess moisture. Chop the artichoke hearts if needed. Soften the cream cheese for easier mixing.
  2. Combine in Crock Pot: Place the softened cream cheese, sour cream, mayonnaise, shredded mozzarella, grated Parmesan, minced garlic, drained spinach, and chopped artichoke hearts into the crock pot. Gently but thoroughly mix all ingredients until evenly combined.
  3. Cook on Low: Cover the crock pot and cook on low heat for 2 to 3 hours. Stir the dip every 30 to 45 minutes to ensure even melting and to prevent it from sticking to the sides.
  4. Season and Serve: Once the dip is fully melted and creamy, season with salt and pepper to taste. Stir again, then serve directly from the crock pot to maintain warmth.

Notes

  • Drain spinach and artichokes well to avoid a watery dip.
  • Use fresh minced garlic for a better, more vibrant flavor.
  • Cook on low heat and avoid overcooking to prevent cheese separation and grainy texture.
  • Stir occasionally during cooking to blend flavors and prevent burning.
  • Using a slow cooker liner can ease cleanup.
