Perfect for cozy dinners, this slow-cooked soup is rich in flavor and perfect to customize with your favorite toppings or dietary preferences.

Ingredients

Scale

Potatoes and Vegetables

  • 6 large russet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced

Meat

  • 6 strips of bacon, cooked crisp and crumbled

Liquids and Dairy

  • 4 cups chicken broth
  • 1 cup milk or cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup sour cream

Garnishes and Seasonings

  • 1/4 cup fresh chives or green onions, chopped
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare your ingredients: Peel and dice the russet potatoes into bite-sized cubes. Chop the onion and mince the garlic. Cook the bacon in a pan until crisp, then crumble it to use later as a topping and to stir in.
  2. Combine in the crockpot: Place the diced potatoes, chopped onions, minced garlic, and chicken broth directly into the crockpot. Season with salt and pepper, and stir to combine all ingredients evenly.
  3. Cook low and slow: Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender and can be easily pierced with a fork.
  4. Blend and enrich: Partially mash some of the potatoes inside the crockpot using a spoon or potato masher to create a creamy texture. Stir in the shredded cheddar cheese, sour cream, and milk or cream until smooth and well combined.
  5. Serve and garnish: Ladle the soup into bowls and top generously with the crispy crumbled bacon, chopped chives or green onions, and extra shredded cheese if desired. Serve hot for the ultimate comfort meal.

Notes

  • Use starchy potatoes like russet for a naturally creamy texture without added thickeners.
  • Don’t skip browning the bacon to add a smoky crunch and depth of flavor.
  • Partially mashing the potatoes inside the crockpot keeps the soup thick while leaving satisfying chunks.
  • Add cheese towards the end to prevent graininess or separation.
  • Adjust the amount of milk or cream gradually to control soup thickness and richness.
