Instructions
- Prepare the Shrimp Scampi: Heat olive oil and butter in a skillet over medium heat. Add the minced garlic and sauté until fragrant but not browned. Add shrimp, season with salt, pepper, and optional red pepper flakes, and cook until the shrimp turns pink and is just firm. Pour in white wine and lemon juice to deglaze the pan. Remove from heat and stir in chopped parsley and lemon zest.
- Cook and Drain the Lasagna Noodles: If using traditional noodles, boil them in salted water until al dente. Drain and set aside on a lightly oiled tray to prevent sticking. If using no-boil noodles, skip this step.
- Mix the Cheese Filling: In a mixing bowl, combine ricotta cheese with half of the grated Parmesan, a pinch of salt and pepper, and some chopped parsley for flavor and color.
- Assemble the Layers: Spread a thin layer of the garlic butter shrimp sauce on the bottom of a baking dish. Layer noodles over the sauce, spread a portion of the ricotta mixture, add shrimp, and sprinkle with shredded mozzarella. Repeat the layers until all ingredients are used, finishing with mozzarella and the remaining Parmesan on top.

Remove the foil and bake uncovered for an additional 10-15 minutes, until the cheese is nicely browned and bubbly. Let the lasagna rest for 10 minutes before serving to allow the flavors to meld.
