Description

Garlic Parmesan Chicken and Potatoes is a comforting, easy-to-make one-pan dinner featuring tender chicken pieces roasted alongside golden, herb-infused baby potatoes. Coated in a rich garlic and parmesan blend, this dish delivers crispy chicken skin and flavorful, roasted potatoes perfect for family meals.

Ingredients

Protein

  • Chicken thighs or breasts – about 4 pieces (around 2 pounds)

Vegetables

  • Baby potatoes – 1.5 pounds, washed and halved
  • Garlic cloves – 3-4, peeled and minced

Dairy

  • Parmesan cheese – 1/2 cup, freshly grated

Oil & Seasonings

  • Olive oil – 2 tablespoons
  • Dried herbs (rosemary, thyme, or Italian seasoning) – 1 teaspoon
  • Salt – 1 teaspoon or to taste
  • Black pepper – 1/2 teaspoon or to taste

Garnish

  • Fresh parsley – 2 tablespoons, finely chopped

Instructions

  1. Prep the Ingredients: Wash and halve the baby potatoes. Peel and mince the garlic cloves. Grate the parmesan cheese. Pat the chicken pieces dry with paper towels to ensure crispy skin when cooked.
  2. Make the Garlic Parmesan Mixture: In a small bowl, combine the grated parmesan, minced garlic, olive oil, salt, pepper, and dried herbs. This mixture will coat the chicken and potatoes to infuse them with rich flavor.
  3. Season the Chicken and Potatoes: Place the chicken and potatoes in a large mixing bowl or roasting pan. Toss them thoroughly with the garlic parmesan mixture, making sure every piece is evenly coated.
  4. Arrange and Roast: Spread the chicken and potatoes in a single layer on a baking sheet or roasting pan to ensure even cooking and crispiness. Roast in a preheated oven at 400°F (200°C) for 35-40 minutes, turning the potatoes halfway through for even browning.
  5. Finish and Garnish: When the chicken skin is golden and crispy and the potatoes are tender, remove from the oven. Let the chicken rest for 5 minutes. Sprinkle freshly chopped parsley on top before serving.

Notes

  • Patting dry the chicken skin before seasoning helps achieve crispy texture.
  • Cut potatoes into similar sizes so they roast evenly.
  • Let chicken rest 5 minutes after roasting to redistribute juices.
  • Use freshly grated parmesan for better melting and crispy crust.
  • Do not overcrowd the pan; leave space for proper browning and crispiness.
