Description

Hamburger Steaks with Onion Gravy is a comforting and hearty dish featuring juicy, tender beef patties smothered in rich, savory onion gravy. Perfect for a cozy family dinner, this recipe uses simple pantry ingredients to deliver big flavor with a rustic, home-style charm. Ideal for any season, it’s easy to customize and always satisfying.

Ingredients

Scale

For the Hamburger Steaks

  • 1 lb ground beef (80/20 recommended for juiciness)
  • 1/2 cup bread crumbs (gluten-free if preferred)
  • 1 large egg
  • 1 tablespoon Worcestershire sauce (or substitute soy sauce with lemon juice or balsamic vinegar)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter or oil (for browning)

For the Onion Gravy

  • 2 large yellow onions, thinly sliced
  • 2 tablespoons butter (or oil) for sautéing
  • 2 tablespoons all-purpose flour or cornstarch (gluten-free thickener option)
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Prepare the Patties: Combine ground beef, bread crumbs, egg, Worcestershire sauce, salt, and pepper in a bowl. Gently mix until just combined, then shape into evenly sized oval patties to ensure even cooking.
  2. Brown the Steaks: Heat butter or oil in a skillet over medium-high heat. Cook the patties on each side for about 3-4 minutes until they develop a nice golden crust. Remove and set aside temporarily.
  3. Make the Onion Gravy: In the same skillet, add more butter if needed and sauté sliced onions over medium heat until soft and golden brown, about 10 minutes. Sprinkle in flour and cook for a minute, stirring continuously.
  4. Add Broth and Simmer: Slowly whisk in beef broth, scraping the pan to deglaze and lift all those flavorful browned bits. Allow the gravy to simmer until thickened and silky, about 5-7 minutes. Season with salt and pepper to taste.
  5. Finish Cooking the Patties: Return the browned hamburger steaks to the skillet, spoon some gravy over them, cover, and let everything cook together for another 5 minutes until the patties are cooked through and tender.

Notes

  • Don’t overmix to keep patties tender instead of dense.
  • Caramelize onions slowly over low heat for deep sweetness.
  • Use a cast iron skillet for best browning and flavor.
  • Season the gravy gradually and adjust salt and pepper as it simmers.
  • Cover the pan when finishing the steaks in the gravy to trap steam and keep patties juicy.
