Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm milk (about 110°F / 43°C)
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 4 tablespoons unsalted butter, melted

Herb & Garlic Filling

  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 3 cloves garlic, minced

Instructions

  1. Prepare the Dough: Warm the milk slightly and stir in the sugar and active dry yeast. Let it sit for 5-10 minutes until bubbly to activate the yeast. In a large bowl, combine the flour and salt. Slowly pour in the yeast mixture and melted butter, mixing until the dough comes together. Knead on a floured surface for 8-10 minutes until smooth and elastic.
  2. First Rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm spot for about 1 to 1.5 hours or until it has doubled in size.
  3. Prepare Herb & Garlic Filling: While the dough rises, finely chop the fresh herbs and mince the garlic. Mix them into softened butter and set aside. This herb and garlic butter will provide the flavorful swirl inside the rolls.
  4. Shape the Rolls: Once the dough has doubled in size, roll it out into a large rectangle on a lightly floured surface. Spread the herb and garlic butter evenly over the dough. Starting from one long edge, carefully roll the dough into a tight log. Slice the log into even pieces and arrange them cut-side up in a greased baking pan.
  5. Second Rise and Bake: Cover the shaped rolls and let them rise for about 30 minutes until puffy. Preheat the oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until golden brown on top. For extra shine, brush melted butter over the rolls immediately after baking.

Notes

  • Use warm milk (not hot) to activate yeast properly without killing it.
  • Fresh herbs provide the most vibrant flavor; avoid dried when possible.
  • Knead dough thoroughly to develop gluten for a soft, chewy texture.
  • Spread herb butter evenly without overloading to avoid cracking while rolling.
  • Bake rolls until golden brown to prevent drying out; watch closely.
