Ingredients

Scale

Protein

  • 1 lb fresh or frozen peeled shrimp

Vegetables & Beans

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes (fire-roasted or regular)
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 medium onion, diced
  • 23 cloves garlic, minced

Liquids & Oils

  • 4 cups chicken or vegetable broth
  • 12 tbsp olive oil or cooking oil
  • Juice of 1 lime (about 2 tbsp)

Seasonings & Herbs

  • 2 tbsp taco seasoning (blend of chili powder, cumin, paprika, oregano)
  • ¼ cup fresh cilantro, chopped
  • Salt, to taste

Instructions

  1. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until fragrant and translucent, about 3-4 minutes. This step builds the flavorful base for the soup.
  2. Add Spices and Tomatoes: Stir in the taco seasoning, coating the onions and garlic evenly. Then add the diced tomatoes with their juices and mix well to combine the vibrant flavors.
  3. Pour in Broth and Beans: Pour in the chicken or vegetable broth. Add rinsed black beans and corn kernels. Bring the mixture to a gentle simmer and let it meld all flavors for about 10 minutes.
  4. Cook the Shrimp: Add peeled shrimp to the simmering soup. Cook until shrimp turn pink and opaque, about 3-5 minutes. Avoid overcooking to keep shrimp tender and juicy.
  5. Finish with Fresh Ingredients: Remove the pot from heat. Stir in fresh lime juice and chopped cilantro. Adjust salt or seasoning as needed. Serve hot with your preferred garnishes.

Notes

  • Use fresh or high-quality frozen shrimp for best taste and texture.
  • Do not overcook shrimp; add them last and cook just until pink.
  • Customize taco seasoning to your preferred heat level by adjusting chili powder, cumin, or smoked paprika.
  • Rinse canned beans to reduce sodium and improve flavor.
  • Add garnishes just before serving to maintain texture and freshness.
