  • 34 Dried Ancho Chilies

  • 1 medium White Onion

  • 1 teaspoon Cumin Powder
  • 1 teaspoon Oregano
  • 2 Bay Leaves
  • 3 cups Beef Broth
  • Salt and Pepper to taste

Instructions

  1. Prepare the Chilies: Remove stems and seeds from guajillo and ancho chilies, then soak them in hot water for 20 minutes to soften and release their flavors. This helps ensure a smooth blend later.
  2. Make the Chili Sauce: Transfer the softened chilies, tomato, garlic, onion, vinegar, cumin, and oregano into a blender. Blend until smooth, creating a vibrant and flavorful sauce that will coat the beef and infuse the dish with authentic birria taste.
  3. Season the Beef: Cut the beef chuck roast into large chunks, season generously with salt and pepper, and place into the slow cooker. Pour the chili sauce over the beef, making sure it is well coated.
  4. Add Broth and Simmer: Add beef broth and bay leaves to the slow cooker. Cover with the lid and cook on low for 8 to 10 hours or on high for 4 to 6 hours, until the beef is tender and easy to shred.
