Instructions

  1. Prepare the Dough: Combine the active sourdough starter, warm water, and Greek yogurt in a mixing bowl. Whisk gently until smooth, then gradually add the flour, baking powder, and salt. Stir until a rough dough forms.
  2. Knead the Dough: Turn the dough onto a lightly floured surface and knead for 8 to 10 minutes until smooth and elastic. Add a little flour if sticky, to develop gluten and the dough’s chewiness.
  3. Let the Dough Rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let rise at room temperature for 3 to 4 hours or until roughly doubled in size.
  4. Shape the Naan: Divide the risen dough into 6 to 8 equal portions. Roll each portion into a tear-drop or oval shape about 1/4 inch thick on a floured surface.
  5. Cook the Flatbreads: Heat a heavy-bottomed skillet or cast-iron pan over medium-high heat. Brush with oil or ghee. Cook each naan for 2-3 minutes on the first side until bubbles form and the underside is golden brown, then flip and cook for another 2 minutes until charred spots develop.
