Description

Sticky Banana, Date & Pecan Skillet Pudding is a warm, gooey dessert combining ripe bananas, caramel-rich dates, and crunchy pecans baked in a cozy skillet. Naturally sweetened and perfectly spiced, this comforting pudding offers a delightful balance of texture and flavor, ideal for dessert, breakfast, or snacks.

Ingredients

Scale

Fruit & Nuts

  • 3 ripe bananas, peeled and sliced
  • 1 cup chopped dates
  • 1 cup chopped pecans

Wet Ingredients

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup milk or cream
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract

Dry Ingredients & Spices

  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free)
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Prepare the Ingredients: Peel and slice the ripe bananas, chop the dates and pecans evenly, and preheat your oven to 350°F (175°C). Gather all ingredients to have them ready.
  2. Make the Base Batter: In a mixing bowl, combine the melted butter with the brown sugar until smooth and slightly caramelized. Add the vanilla extract, milk or cream, and beaten eggs, stirring until fully incorporated.
  3. Add Dry Ingredients and Mix: Whisk together the flour, baking powder, cinnamon, nutmeg, and a pinch of salt. Gradually fold the dry ingredients into the wet mixture to form a thick but pourable batter. Be careful not to overmix.
  4. Layer the Skillet: Butter a 9-inch cast-iron skillet or similar oven-safe dish. Spread half the batter evenly on the bottom. Distribute the sliced bananas, chopped dates, and pecans over the batter, then pour the remaining batter on top to cover the fruit and nuts.
  5. Bake Until Golden: Place the skillet in the preheated oven and bake for 35–40 minutes, or until the pudding is set and golden on top. Test doneness with a toothpick; it should come out clean.
  6. Cool Slightly and Serve Warm: Allow the pudding to cool for a few minutes in the skillet before serving. Serve warm for the best gooey texture.

Notes

  • Use overripe bananas with brown spots for maximum sweetness and softness.
  • Chop nuts evenly to ensure consistent texture and even baking.
  • Fold batter gently to keep the pudding light and tender.
  • Use a 9-inch cast-iron skillet for ideal depth and heat distribution; other oven-safe skillets of similar size also work.
  • Start checking for doneness 5 minutes before baking time ends to prevent overbaking.
