Strawberry Cake Truffles

  • Author: Amelia
  • Total Time: 1 hour 20 minutes
  • Yield: About 30 truffles
  • Diet: Gluten Free (if using gluten-free cake mix and ingredients)

Description

Strawberry Cake Truffles are bite-sized, moist, and flavorful treats combining strawberry cake crumbs with creamy frosting, coated in smooth chocolate. Easy to make and perfect for parties or snacks, these truffles deliver a delightful burst of strawberry flavor in every bite.

Ingredients

Base Ingredients

  • Strawberry Cake Mix (pre-made or homemade) – 1 standard cake batch or approx. 3 cups crumbled cake
  • Cream Cheese Frosting – about 1 cup

Coating

  • White or Milk Chocolate Chips – 12 oz (340 g)
  • Butter or Coconut Oil – 1 tablespoon

Optional Toppings

  • Freeze-Dried Strawberries (crushed) – 1 to 2 tablespoons

Instructions

  1. Bake or Prepare the Cake: Start by baking the strawberry cake mix according to package instructions or your favorite homemade recipe. Allow it to cool completely so it’s easy to crumble.
  2. Crumble the Cake: Break the cooled cake into fine, even crumbs using your hands or a fork in a large bowl, avoiding large chunks to ensure smooth truffles.
  3. Mix with Frosting: Gradually add cream cheese frosting to the cake crumbs, mixing gently until the mixture holds together like dough but is not too sticky.
  4. Shape the Truffles: Roll the mixture into small bite-sized balls using your palms. Place the formed truffles on a parchment-lined tray and chill in the refrigerator for at least 30 minutes to firm up.
  5. Melt the Chocolate: Melt the chocolate chips with butter or coconut oil gently in a microwave or double boiler, stirring frequently until smooth and glossy.
  6. Dip and Coat: Using a fork or toothpick, dip each chilled truffle into the melted chocolate, fully coating it. Place back on parchment-lined tray and optionally sprinkle with crushed freeze-dried strawberries.
  7. Let Them Set: Refrigerate the coated truffles for about one hour to allow the chocolate to harden before serving.

Notes

  • If the dough feels too wet, add more cake crumbs; if too dry, a bit more frosting can help.
  • Chill the cake crumbs and truffles well between steps for easier handling and cleaner dipping.
  • Use a toothpick when dipping to avoid messy fingers and achieve even chocolate coating.
  • Gently melt chocolate without overheating to prevent seizing ensuring smooth dipping.
  • Store truffles in airtight containers to keep freshness and avoid condensation affecting texture.
