Instructions

  3. Make the Tomato Basil Sauce: In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute. Stir in the diced fresh tomatoes and simmer until they soften and start breaking down, about 8-10 minutes. Add the fresh basil leaves and stir to combine.
  4. Add Cream and Cheese: Pour in the heavy cream while stirring constantly. Allow the sauce to simmer until it thickens slightly, then add the freshly grated Parmesan cheese. Stir until the cheese is melted and the sauce is smooth.
  5. Bring It All Together: Return the cooked chicken to the skillet and toss in the drained rigatoni. Mix everything thoroughly, adding reserved pasta water as needed to achieve the desired sauce consistency. Simmer together for 2-3 minutes to marry all the flavors.
