- Heating the Dairy: In a saucepan, combine 1 cup whole milk and 1 cup heavy cream. Warm gently over medium heat just until simmering, then remove from heat. This warm mixture helps dissolve the chocolate and sugar effectively.
- Melting the Chocolate: Add 6 oz chopped quality dark chocolate to the warm milk and cream mixture. Stir continuously until the chocolate is fully melted and the mixture is smooth and aromatic.
- Mixing the Custard: In a separate bowl, whisk together 4 large eggs, 2/3 cup granulated sugar, 1 tsp vanilla extract, and a pinch of salt until combined. Slowly pour the warm chocolate mixture into the eggs, whisking continuously to prevent the eggs from cooking and to create a smooth custard.
